Taronga is looking to undertake an open public tender to identify a food & beverage retail and catering services partner to manage Taronga Zoo’s (TZ) Mosman site’s food and beverage.

Project goals

Taronga’s vision is to enhance visitor experience of TZ by providing market leading In-Ground and Function catering facilities that differentiate TZ from other tourism experiences in the Sydney area.

Food and beverage play a key role in achieving a successful and memorable visitor experience, as well as financially contributing to Taronga’s conservation efforts.

Some of the main contractual objectives that Taronga require are:

• Ensuring that the catering operations are conducted to the highest standards and in a manner that enhances the guest experience

• Delivering a high standard of food quality, safety and service delivery that meets and exceeds market demands and expectations

• Ensuring value for money is achieved that satisfies market segmentation of zoo visitors

• Develop, integrate and embed a partnership with the Caterer that assists Taronga to grow its business and deliver a shared vision, commercial objectives and conservation strategies

• Identify opportunities for capital investment to redevelop and upgrade onsite catering/ accommodation facilities

• Provide an In-Ground and Function & Events offer with high visitor appeal that will deliver an annual per capita increase

Scope

Taronga is a statutory corporation that is owned by the people of New South Wales and is responsible for the operations of Taronga Zoo (TZ) in Sydney and Taronga Western Plains Zoo in Dubbo. As a not-for-profit organisation, the Principal depends on the ongoing generosity and commitment of its various supporters and stakeholders.

The current catering services contract expires naturally on 30th November 2025. Taronga currently has a fully outsourced contract that provides Trippas White Group an exclusive licence for all catering rights at TZ in Sydney.

The opportunity will be for 7 years. The conforming model is a profit share agreement, which is Taronga’s preference, but Taronga is also open to other commercial models.

TZ’s in grounds catering facilities include several independent outlets including, Me-Gal restaurant (part of Taronga Wildlife Retreat), the Taronga Food Market (multiple outlets housed under a single back-of-house operation), Saltwater Bistro, Forage & Graze and temporary vending locations.

There are a number of venues for Functions & Events, including but not limited to Dalang Ballroom, Ng’galawa Terrace, The Gili Rooftop, Heritage Boardroom and Lawn Event Spaces.
