• To have a range of experienced outdoor and festival style operators available to ensure customer demand for food and beverage can be met during periods of increased activity on the forecourt;
• To offer a wide variety of quick-service, high quality food and beverage at accessible price points while offering smart payment solutions to customers;
• To cater for dietary requirements including vegetarian, gluten free and children's meals;
• To have a range of food and beverage operators with the agility to adapt their offerings and infrastructure to accommodate a large range of customer demographics and numbers
• Commitment to operate within the Opera House's heritage and conservation guidelines, including the Opera House Outdoor Event Guide (included in the Information Package);
• To ensure a welcoming and safe precinct for all visitors that preserves public access and safety egress corridors at all times; and
• To ensure that alcoholic beverages are served in full compliance with all laws at all times.
